These tasty brekkie bars are packed with protein to help you start your day the right way. Prep ahead and grab for breakfast on-the-go, or keep in your desk drawer for when you need a pick-me-up.

You’ll need:
For the base:
125g California walnuts
180g rolled oats
35g plant-based vanilla protein powder
125g unsweetened applesauce
1 tsp vanilla extract
3 tbsp maple syrup
Pinch of salt
1 tsp cinnamon
For the crumble topping:
35g rolled oats
30g California walnuts, chopped finely
30g pumpkin seeds
150g fresh blueberries
60ml coconut milk
Method
1. Preheat the oven to 180°C
2. Line a 9x9 inch square baking dish with parchment paper
3. Place all the ingredients for the base into a food processor and blitz on high until a doughy mixture forms
4. Place the mixture onto the prepared baking dish and spread into an even layer with a spatula, then bake for 8 minutes
5. Meanwhile, make the crumble topping. Place all of the ingredients into a bowl and mix
6. After the 8 minutes, remove the baking dish from the oven and top with the crumble, pressing the mixture down gently into an even layer, then bake for another 12 minutes
7. Remove from the oven and cool in the pan for 30 minutes, then slice into 12 even bars and remove from the baking dish
Store the bars in an air-tight container in the refrigerator for up to one week
